Torta di Pasqua a Mantignana

It’s tradition in Umbria to prepare, the week before Eastern, this special “Torta”, that is not a cake, has no sugar and tastes wonderfully!!
It’s made with flour eggs and several different kind of cheese.
Every family has it own recipe that is handed down from mother to daughter.
To prepare la Torta di Pasqua is a job for the whole family. Even men are involved, as it’s necessary a lot of strength to work the dough (if no men are available in your family for this task, you can simply buy a good and strong mixer!!!)
