The variety of Italian cheeses is incredible!
In Italy we can identify 472 traditional cheeses (recognized by our regions) and 46 DOP, a further recognition.
Each cheese is not only the product of local milk, it is also an important part of local history and culture! Every territory, almost every village has its own production of cheese, and its special combination with wine.
A board of cheeses, eaten with some salumi, accompanied by a glass of red wine, is a typical light lunch that lots of Italians choose for their lunch while out of home.
We can organize a cheese tasting at the market, choosing the product of local farmers, or a more complete tasting, ranging from mozzarella, to ricotta, two types of pecorino cheese (a young and a more mature one) accompanied by chestnut honey, to finish with our strongest cheeses like parmigiano, savoured with a drop of balsamic vinegar, and gorgonzola.
We will explain to you the cheese and its culture, how we usually taste it, the correct knives to use, the perfect wines to drink with it.
